Our coffee department has sourced a beautiful coffee for our decaf that meets and exceeds Purity standards. The coffee is a single origin from Finca Santa Maria, Bucaramanga, Colombia.

One of the less-known issues in the coffee industry is that many coffee lots sent for decaffeination are often old coffee that didn't sell or lower-grade coffee. This is NOT the case with Purity Calm.

One line, from the 5 lb bag to the pocket sachet

Flow comes as Whole Bean Coffee, Ready to Brew Ground Coffee, coffee pods and Pocket Purity sachets, plus 5 lb Bags for the big household.

Purity Pods: The packaging box for our coffee pods is entirely recyclable.

Pocket Purity Cartons and Sachet Packaging: These products are also recyclable, with the sachet itself made from a biodegradable and vegetable-based woven material called polylactic acid (PLA).

Our pods have fewer grams in them (10g to 11.5g), and pod brewers tend to brew more quickly at lower temperatures, so caffeine will be less in pods than the Pocket Purity sachets.

Managing the First Mile

Why Invest in a Farm and Why Now?

When we first had the idea to create Purity Coffee®, one of the problems we needed to solve was determining which coffees to source based on positive impacts on health. I knew that, at the very least, our coffee had to be organic, free of mold and toxins, and defect-free specialty grade. Upon locating coffees that met this baseline standard, we then began to lab-test these coffees to determine which contained the most antioxidant compounds. Those that were the very highest in antioxidants would be the coffees we’d select for Purity Coffee®.

After going through this process over the years and testing multiple different coffees from around the world, we began to see a trend...

Coffees that contained the highest levels of antioxidants and nutritious compounds always grew in diverse, cultivated organic ecosystems.

These coffees grow on lush, heavily forested coffee farms rife with indigenous plants, trees, and lots of shade. Native wildlife and insects are also plentiful among these farms and contribute to their flourishing ecosystems, which further reduces reliance on chemicals and supports organic pesticide free coffee production.

It is on this farm we will be able to make 100% of the decisions that are in the best interest of health, without compromise. Most coffee grown worldwide is produced based on practices that prioritize taste, profit, or both.

Developing Sustainable, Ideal Practices that are Replicable

Through extensive research, testing, and hard work…our intention is to develop a new standard for healthy coffee best practices at the farm level.

One of our primary goals is to plant diverse, indigenous shade trees that are conducive to coffee production. Animals are a critical part of regenerative farming. Our farm now has rabbits... chickens, ducks, and bees... and we hope to introduce more species as things develop. We will be setting up bee hives on the edge of our 13-hectare forest preserve that borders the coffee lots.

Our farm will be a “work in progress,” and the coffee we grow will not be used in any of our Purity Coffees until we can verify that it’s reached the standards that we’ve set for ourselves and for our customers.

We then concluded that the only way forward was to make a direct investment in this research on our own farm "laboratory." This would allow us to experiment at the soil level, testing different organic inputs, working with various cultivars, keeping copious records, and learning what makes a difference through our own trial and error.

By owning this first mile in the production process, we could potentially influence the levels of healthy compounds and chlorogenic acids that are contained in our coffees.

The driving need for healthier habits

The journey to better health through coffee

How one couple’s quest for improved health inspired the creation of Purity Coffee®.

Habit change is hard. With so much conflicting information out there about what we should be eating and drinking to achieve better health, making responsible dietary choices can be confusing and overwhelming. This is exactly what inspired Andrew Salisbury to start Purity Coffee.

Doctors were stumped and Amber and Andrew were frustrated. The couple had been doing everything that healthy adults should: exercising regularly, eating healthy and organic foods, getting regular sleep, and drinking plenty of purified water. Nothing seemed to help.

Amber wasn’t about to give up on her coffee pick-me-up without proof so Andrew set out to discover the real truth about the health effects of coffee. His investigation took him straight to the experts: Vanderbilt University Institute of Coffee Studies (ICS).

The Salisburys were ready to take on that challenge.

Brew notes

Brewing recommendations:

  1. This is a medium-fine grind, best suited for brewing with an electric drip machine, manual pour-over, Aeropress, or Clever Dripper.
  2. Use filtered water and clean brewing equipment.
  3. Try 4 Tbsp (20g) per 12-oz mug to start, and adjust to taste.
  4. Check that your water temperature is between 195F and 205F.
  5. Once you open this bag, ensure it remains airtight and consume it within 10 days for optimal aromatics.

You should get equivalent results if you prepare your Purity coffee with about 13 to 15 grams per cup of medium-fine grind and use near-boiling water. One 12 oz bag = about 25-30 8 oz cups of coffee.

Which is the better option in the battle between arabica vs. robusta coffee?

Generally speaking, high-quality arabica can be rich, sweet, incredibly aromatic and feature flavor notes of fruits, herbs, spices, flowers, chocolates, nuts and more. On the other hand, robusta beans can taste overwhelmingly bitter, primarily due to the higher caffeine content and lower sugar content, making them seem "flat" or papery.

Purity organic whole bean coffee comes from 100% arabica beans, sustainably sourced from farms in Colombia, Nicaragua and Honduras, and we are also looking at other origins.

We're still seeking the "unicorn" of a great tasting, certified organic, contaminant-free robusta to see if there might be a way to take advantage of the higher caffeine or CGA. Unfortunately, we have yet to find one that meets our standards.

A side note: We call them coffee "beans," but actually, they are the seeds of the fruit of the coffee plant. Brazil is by far the leading producer of arabica globally, followed by Colombia, Ethiopia, Honduras, Peru and Guatemala.

Each season, we lab-test each shipment to ensure the coffees meet or exceed Purity's standards. We even offer single-serve coffee pods for all you Keurig lovers, made from the same healthy coffee beans as our whole bean blends.

Responsible Packaging: Our Commitment to Sustainability

At Purity Coffee®, we are deeply committed to reducing our environmental impact and making responsible choices when it comes to our packaging. As a perishable consumer packaged goods company, we understand that our packaging choices directly influence our carbon footprint.

Challenges of Biodegradable and Compostable Materials

While there are well-intentioned discussions about the merits of biodegradable and compostable packaging materials, it's important to consider their limitations. In reality, most materials claiming to be compostable require commercial composting facilities to break down properly. This means that, for the majority of these consumer products, their ultimate destination is a landfill.

We have found no coffee product materials that are compostable in home composting or biodegradable in landfills.

Advancing Sustainability Through Recycling

Most food-safe LDPP (Low-Density Polypropylene) and LDPE (Low-Density Polyethylene) materials are curbside recyclable in many communities. At Purity Coffee, we prioritize using materials with post-consumer content whenever possible to contribute to the circular economy.

In 2022, we embarked on a significant initiative to transition all our coffee bags to recyclable plastic, incorporating over 50% post-consumer content.

Our Approach & Disclaimer

We must state emphatically that we are not making health claims about our coffee. Of course, the U.S. Food and Drug Administration controls what a food company can and cannot say about the functionality of their products.

In fact, accurate information on coffee is one of the motivations of the founding of Purity Coffee, because we, too, were confounded by the “noise” of the internet, when it came to facts on coffee.

Instead, we seek to discover, learn and present the most current scientific research on coffee done by university and professional, independent research labs. We examine the technical literature on coffee from peer-reviewed professional journals and books (not blog posts or distilled news articles).

It is difficult to explain why some people react to coffee one way, and others another way. Of course, all of us are different with our own internal chemistry, biology, and functionality of our many glands, organs and moving parts. Similarly, every coffee is different with its cocktail of compounds in different quantities. Coffee is a complex blend of hundreds of compounds, the amounts of which depend on various aspects of the coffee quality.

Quality is also determined by type of coffee (arabica or robusta), cultivar, handling and processing from farm to country of consumption, how it is roasted (degree of roasting, type of roaster used, etc.), when and how it is ground, and finally how it is brewed.

We start with our mission: To improve the world’s health through coffee. As with any food or medicine, it is not for everyone, and we always insist that you listen to your own body.
